Tufts researchers identify tomato compound phytoene may protect against fatty liver disease in mice

Tufts University researchers discovered that phytoene — a precursor to lycopene in plants — reduced metabolic dysfunction-associated steatotic liver disease in mice.

The condition involves fat buildup in liver cells, leading to inflammation and cirrhosis, and affects up to 38 per cent adults.
